Tasty Tuesday: Salsa

One of my co-workers, Lyz, shared her salsa recipe a few years ago with me and I make it every so often. It actually makes a huge bowl, so it is good for parties, and then leftovers for several days. I made it on Saturday for the bbq at my mom's house. Today, I put it on top of a bed of lettuce for a bit of salsa salad.

There's not much to do other than mix it all together, but here are the ingredients:
  • 5 large tomatoes, diced (let drain in a strainer for at least a half hour to get moisture out)
  • 1 medium can of black beans, rinsed
  • 1 medium can of corn or mexican/spanish corn, drained
  • the zest of one lime and one lemon
  • the juice of 1/2 lime and one lemon
  • handful of fresh cilantro, finely chopped
  • 1 large onion, diced
  • 1 small can of jalepenos, finely diced
  • 1 small can of green chilis, finely diced
  • 1/2 teaspoon of minced garlic (I use about 3 cloves, actually)
  • 1 can of garbanzo beans, rinsed
  • salt and pepper to taste
