Beef and Barley Soup recipe

I'm making soup tonight, and thought I'd share my recipe.

Package of lean cubed stewing beef - cube them smaller, into bite sized chunks
Carrots (about 3 carrots - or I use a bunch of baby carrots because that's what I have in the house)
Potatoes (I like to use the small yellow potatoes that come in a bag - they're like, boiling potatoes or something, but you can also use just 3-4 regular sized yellow or red potatoes, or 2 Idahos).
Celery (about 3 stalks)
Small Onion
Garlic (2 cloves)
Thyme (about a teaspoon)
Salt (1/4 teaspoon)
Pepper (1/4 teaspoon or to taste)
Beef stock (48 oz can)
3 beef bouillon cubes
Olive Oil
1/2 cup Barley

Cube up the meat, dice the onions, and mince the garlic. Chop the veggies. Put 2 tbsp of EVOO in the soup pot, turn the stove onto medium-ish heat, and put the meat, onions, and garlic in and brown the meat all around.

Add  the veggies, and the can of beef stock, plus about 5 cups of water and the 3 bouillon cubes to the pot. Add in the spices and the barley. Mix all together and bring to a boil. Once boiling, bring to a low boil/simmer for about 35-40 minutes.
